Cheesy Ham and Hashbrown Casserole

I made this casserole for a work holiday brunch a few years back and had a great response.

Prep Time: 15 minutes
Cook Time: 1 hour
Servings: 12
Kitchen Tools: 9x13 baking dish and a large mixing bowl

INGREDIENTS:
1 (32 oz) package of frozen hash brown potatoes
8 oz cooked, diced ham (I bought the salad topper kind)
2 cans of condensed cream of potato soup (the healthy options work well too)
1 (160z) container of sour cream (may substitute lower fat, but fat free isn't as creamy)
2 cups shredded sharp cheddar cheese
1 1/2 cups grated Parmesan cheese
*Both cheeses may be substituted for low fat or fat free to reduce calories and fat in the dish

DIRECTIONS:
1. Preheat oven to 375 degrees Fahrenheit. Lightly grease or spray non stick spray in a 9x13 inch baking dish.

2. In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.

3. Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.
